Described by Taj’s “Spice” magazine as “an absolute gourmet genius”, Brian is an innovative, creative and passionate chef with over 26 years extensive experience, from fine dining to banqueting operations. His well earned reputation has been gained in some of London’s finest properties.

Alongside the new Executive Chef, Marco Sani has joined the Docklands Bar and Grill team as the new General Manager. In his long career in some of the most exclusive hotels and restaurants in Italy and the UK, culminating with the last experience in a Michelin starred restaurant, he has developed an overall attention to detail and passion for service perfection without failing to provide a warm and friendly welcoming atmosphere.
